Recipe of the Week | Reindeer steak grilled with artichokes, spring onions, and black truffle

Ingredients:

2 reindeer steaks (approximately 200-250g each)

4 artichokes

4 spring onions

4 new potatoes

Fresh black truffle or black truffle slices

Fresh butter

Salt and freshly ground black pepper

Fresh rosemary (optional, for garnish)



Instructions:

Prepare the ingredients: Clean the artichokes by removing the outer tough leaves and trimming the tips. Cut the artichokes in half and remove the inner choke. Halve the spring onions. Marinate the meat: Season the reindeer steaks with olive oil, salt, and black pepper. Prepare the grill or pan: Preheat the grill or pan over medium-high heat. Grill the reindeer steaks: Place the seasoned reindeer steaks on the preheated grill or pan and cook for about 4-5 minutes per side, or until cooked to your desired doneness (usually medium-rare to medium for reindeer). Cook the artichokes and spring onions: While the steaks are cooking, grill the artichokes and spring onions on another part of the grill. Lightly brush with olive oil and cook until tender and slightly golden. Finish with black truffle: Once the steaks are cooked to perfection and the vegetables are tender, arrange the steaks on serving plates. Garnish with slices of fresh black truffle or black truffle slices on top of the steaks. Add the grilled artichokes and spring onions on the side.
